1. Indian Burger 印度漢堡
1-1 Potato Masala for Patties 綜合香料馬鈴薯漢堡排
Ingredients 食材
Boiled Potatoes | 500g | 熟馬鈴薯 |
Peas | 1/3rd cup | 青豆 |
Onions (Diced) | 1/3rd cup | 碎洋蔥 |
Carrots (Finely Diced) | 1/3rd cup | 碎紅蘿蔔 |
French Beans (Finely Chopped) | 1/3rd cup | 碎四季豆 |
Garlic (Chopped) | 1.5 tbsp | 蒜碎 |
Chili Powder | 1 tsp | 辣椒粉 |
Turmeric | 1/2 tsp | 薑黃粉 |
Cumin Powder | 1 tsp | 孜然粉 |
Salt | 1.5 tsp (To taste) | 鹽 |
Mango Powder(Amchur) | 2.5 tsp | 芒果粉 |
Oil/Ghee | 2 tbsp | 食用油或印度酥油 |
Method 方法
- Take oil in a pan and heat it on a low flame. 取一個鍋並加入食用油,再用小火加熱。
- Add onions and garlic and sauté for a minute. 加入洋蔥及蒜並煸炒約一分鐘。
- Now add other vegetables (peas, beans, carrots) and sauté for 2 minutes. 加入其他蔬菜(青豆、四季豆、紅蘿蔔)並煸炒約二分鐘。
- Add turmeric, chili powder, salt, cumin powder, dry mango powder and mix well. 加入薑黃粉、辣椒粉、鹽、孜然粉、芒果粉後攪拌均勻。
- Cook it for a minute or two until vegetables are a little soft. 煮約一或二分鐘,直至所有蔬菜均軟化。
- Add mashed boiled potatoes and mix well. 加入碎的熟馬鈴薯並攪拌均勻。
- Cook it for two minutes and take it off the flame and let it cool down. 煮約二分鐘後,關火並放置一旁冷卻。
- Once cold enough put it in the refrigerator and rest for 30 minutes. 自然冷卻過後放入冰箱約三十分鐘。
- After 30 minutes, take the filling and make patties of approx. 1.5-inch thickness or as per your need. (Size of patties should be a little smaller than the burger bun) 三十分鐘後,開始製作漢堡排,每個約1~1.5英吋厚(或自己想要的尺寸)。漢堡排的尺寸(直徑)要小於漢堡麵包。
1-2 Batter 麵糊
Ingredients 食材
All-purpose flour | 1 cup | 中筋麵粉 |
Corn flour | 1/2 cup | 玉米麵粉 |
Salt | To taste | 鹽 |
Oil | 1 tbsp | 食用油 |
Cold Water | As needed | 冷飲用水 |
Method 方法
- Mix all the dry ingredients in a big pot. 將所有乾料放進大的調理盆後攪拌均勻。
- Add oil and mix it. 加入食用油並攪拌均勻。
- Now, add cold water slowly and mix well to avoid having lumps in the batter. 慢慢加入冷飲用水並均勻攪拌,避免出現結塊。
- Batter should be of pouring consistency. 需攪拌至麵糊為流動型態。
1-3 Dressing Salad 搭配沙拉
Ingredients 食材
Onions (Sliced) | 1/3rd cup | 切片洋蔥 |
Tomatoes (Sliced) | 1/3rd cup | 切片蕃茄 |
Cucumber (Sliced) | 1/3rd cup | 切面小黃瓜 |
Fresh Coriander | 1/3rd cup | 香菜 |
Lemon | 2 tbsp | 檸檬 |
Black salt | 1.5 tsp | 岩鹽 |
Salt | To taste | 鹽 |
Chili powder | 1 tsp | 辣椒粉 |
Fresh Green Chilies (Chopped) | 1.5 tsp | 碎綠辣椒 |
Chaat Masala (Optional) | 1.5 tsp | 街頭小吃綜合香料 |
Method 方法
- Add all the chopped vegies in a bowl along with lemon, coriander, and other spices. 將所有蔬菜放入大的調理盆內,並加入檸檬汁、香菜及綜合香料。
- Mix well till the soften up a little. 攪拌均勻並確認蔬菜軟化。
1-4 Dressing Sauce 搭配醬汁(沾醬)
Ingredients 食材
Mayo | 2 tbsp | 美乃滋 |
Ketchup | 2 tbsp | 蕃茄醬 |
Method 方法
- Mix mayonnaise and ketchup in a bowl. 將美乃滋及蕃茄醬加入調理盆內並攪拌均勻
1-5 Assembly for the burger 組成漢堡
- Take a plate and put some dry breadcrumbs on it. 取一個盤子並放入一些乾麵包屑。
- Now take the patty, soak it in the batter and coat it with the breadcrumbs. 將製作好的漢堡排浸入麵糊並取出雙面均勻沾乾麵包屑。
- Put oil to heat up on a medium flame. 準備起油鍋,使用中火加熱。
- Once the oil is hot, add the patty and fry it till its golden brown on the outside. 油鍋完成加熱後,放入準備油炸的漢堡排,直至雙面皆為金黃色。
- Now, take the burger buns, and toast them a little. 準備好漢堡麵包切半,並用一個平底鍋雙面烤上色。
- Apply mayo dressing on one side. 將沾醬抹至一面。
- Now add the patty along with a slice of cheese. 將油炸好的漢堡排與一片起司(任何單片起司皆可)一起放入。
- Add the salad dressing on the top. 在漢堡排上放上一些沙拉。
- Burger is ready to serve. 完成並享用。
2. Mumbai Grill Sandwich. 孟買熱壓三明治
2-1 Coriander Chutney 香菜沾醬
Ingredients 食材
Coriander | 3 cups | 香菜 |
Garlic | 1 tbsp | 蒜 |
Green Chilies | 5 to 6 pcs | 綠辣椒 |
Salt | 1 tbsp | 鹽 |
Chaat Masala | 1 tsp | 街頭小吃綜合香料 |
Slice of bread | 1/2 piece | 一片吐司 |
Method 方法
- Add all the ingredients in the blender and blend it with cold water as needed. 將所有材料放入攪拌機內並打至所需的質地,若有需要可加入一些冷飲用水(或冰塊)。
2-2 Other Ingredients 其他食材
Sandwich Bread | 3 slices | 吐司 |
Salted Butter | As needed | 含鹽奶油 |
Onions (Diced) | 1/2 cup | 碎洋蔥 |
Processed Cheese | As needed | 莫扎瑞拉起司絲 |
Tomatoes (Sliced) | 6 to 8 slices | 切片蕃茄 |
Red Chutney | 2 tbsp | 紅醬(香蒜辣椒醬) |
Chaat Masala | 1 tbsp | 街頭小吃綜合香料 |
Boiled Potatoes/ Potatoes Masala | 4 to 5 tbsp | 熟馬鈴薯(或香料馬鈴薯) |
2-3 Sandwich Assembly 組成三明治
- Take first slice of bread and apply butter on it. 取一片吐司並抹上奶油。
- Now apply a layer of green chutney. 再抹上一層綠醬(香菜醬)。
- Spread the potato masala and top it with onions. 再將熟馬鈴薯(香料馬鈴薯)鋪上後撒上一些洋蔥。
- Sprinkle chaat masala on it. 撒上一些街頭小吃綜合香料。
- Take second slice of bread. 取另一片吐司。
- Apply butter and green chutney on one side and cover the slice of bread with potato masala on it. 一樣抹上奶油及綠醬後蓋在熟馬鈴薯上。
- Now, on the top of the second slice, apply butter and red chutney. 吐司的另一面抹上奶油及紅醬。
- Spread slices of tomatoes and sprinkle chaat masala on it. 鋪上切片蕃茄並撒上一些街頭小吃綜合香料。
- Now, grate the processed cheese or cover it with sliced cheese. 將起司絲撒上或放上一片切片起司。
- Take third piece of bread and apply butter and green chutney. 取第三片吐司並抹上奶油及綠醬。
- Put it on the top of the cheese. 蓋在起司上。
- Three layered sandwich is ready to grill. 三層的三明治準備好熱壓。
- Take a Griller/Sandwich Maker. 使用電三明治熱壓機,或直火鑄鐵模。
- Apply some butter and grill the sandwich till it gets golden brown on the outside. 在熱壓機上抹上一層奶油並將三明治放上開始加熱,直至金黃色。
