Dal Bati Churma 扁豆糊(湯咖哩)、烤小麥球、甜小麥粉

 



Dal Bati Churma is traditional delicacy from the state of Rajasthan in western India. It’s a combination of three dishes in one meal. Dal (One or more than one kind of lentils) cooked with different spices. Bati is a hard bread made from wheat flour and Churma, a dessert made from bati. 

此道料理是來自西印拉賈斯坦邦的傳統佳餚。傳統上,這道菜包含了3種不同的類別主題。第一,Dal是使用一種或多種扁豆與香料煮成糊狀料理,俗稱湯咖哩。第二,Bati是一種使用全麥麵粉烤成非常硬的麵包,搭配著Dal來食用。而最後,就是再使用烤小麥球來做成這道料理的甜點,為Churma甜小麥粉。


1. Bati 烤小麥球

Ingredients 食材: 
  • Whole Wheat Flour/2 cups (300g)/全麥麵粉
  • Semolina/¼ cup (50g)/杜蘭小麥粉
  • Salt/½ tsp (To taste)/鹽
  • Coriander Seeds/½ tsp/香菜籽
  • Ajwain (Carom Seeds)/½ tsp/藏茴香
  • Baking Soda/¼ tsp/小蘇打粉
  • Ghee/¼ cup/酥油
  • Water/½ cup (Approx.)/水

Method 方法: 
  1. Mix whole wheat flour and semolina well. 將全麥麵粉與杜蘭小麥粉充分混合一起。
  2. Add salt, roughly crushed coriander seeds, ajwain and baking soda to the flour. 將鹽、粗略搗碎的香菜籽、藏茴香與小蘇打粉加入混合麵粉中。
  3. Mix all the dry ingredients well. 將所有乾料混合均勻。
  4. Add ghee and rub it well on the flour. 加入酥油並與麵粉充分揉碎。
  5. Add water slowly and knead a stiff dough. 將水慢慢的加入麵粉中,並揉出較硬的麵團。
  6. Let it rest for 20 minutes. 完成後放置一旁休息約20分鐘。
  7. Now, make dough balls of required size and make a small dent in the center. 休息完後取一小球(或所需尺寸),揉成大略的圓球狀後在中心點位置壓出一個凹槽。
  8. Pre-heat oven at 180c. 預熱烤箱並設定溫度180度。
  9. Take an oven tray, line it with butter paper and bake it in over at 180c for 20 minutes. 取一個烤盤,並使用烤紙將剛剛的麵團球一一排列,烘烤時間為20分鐘。
  10. Take the tray out and brush some ghee on the balls and bake it again for 20 more minutes or till golden brown on the outside. 時間到時取出烤盤,並在麵團球表面刷上一些酥油後,再送進烤箱烘烤約20分鐘(或直到外皮已呈現金黃色)
  11. Take them out in a bowl and pour a spoonful of ghee on each bati and leave them aside. 烤完後取出並用一個碗裝,這時使用湯匙舀取一些酥油,倒在小麥球的中間凹陷處。完成後先放置一旁。


2. Dal 扁豆糊(湯咖哩)

Ingredients 食材:
  • Mung Dal (unskinned)/1 cup/剖半綠豆(留皮)
  • Chana Dal/2 tbsp/剖半黑鷹嘴豆
  • Salt/2 tsp (To taste)/鹽
  • Turmeric Powder/1.5 tsp/薑黃
  • Ghee/4 tbsp/酥油
  • Garlic (chopped)/3 tbsp/碎蒜
  • Green chili (chopped)/1.5 tbsp/碎綠辣椒
  • Ginger (Chopped)/1 tbsp/碎薑
  • Cumin seeds/2 tsp/孜然
  • Dried Red Chilies/2 pcs/乾紅辣椒
  • Onion (chopped)/1 cup/碎洋蔥
  • Tomato (chopped)/1.5 cup/碎蕃茄
  • Coriander seeds powder/2 tsp/香菜籽粉
  • Red chili powder/2 tsp/紅辣椒粉
  • Garam Masala (Optional)/¼ tsp/綜合香料(可無)
  • Coriander leaves (chopped)/½ cup/碎香菜葉

Method 方法: 
  1. Take both chana dal (split black chickpeas) and mung dal (split mung beans) and wash them well. 取兩樣剖半的豆類(綠豆與黑鷹嘴豆),用水洗乾淨。
  2. Add them to a pot and a add 6 cups of water and let it soak in water for 30 minutes. 洗淨後,取一個鍋子並加入約六杯的水,浸泡約30分鐘。
  3. After 30 minutes, add ½ tsp of turmeric powder and ½ tsp of salt the pot and boil the dal for 20 to 30 minutes or until cooked well. Keep it aside. 30分鐘後,加入薑黃粉及鹽並煮滾約20~30分鐘(或直到煮熟),完成後放置一旁。
  4. Take ghee in another pot. 取一些酥油放到另一個鍋子裡。
  5. Let it heat up. 加熱。
  6. Add garlic, ginger, and chili to the ghee and saute for a minute. 加入蒜、薑及辣椒進鍋內爆香。
  7. Add cumin seeds and cook for few minutes till garlic is cooked. 加入孜然並煮到蒜成焦糖化。
  8. Now, add onions to the pot and mix it well. 加入洋蔥並充分拌炒。
  9. Cook it till onions are translucent in color. 拌炒至洋蔥透明化。
  10. Now, add tomatoes to the pot and mix well. 加入蕃茄並充分拌炒。
  11. Now, add turmeric powder, chili powder, coriander powder and salt and ¼ cup water. 加入薑黃粉、紅辣椒粉、香菜籽粉、鹽及四分之一杯的水。
  12. Stir occasionally while cooking. 適時的攪拌。
  13. Let the mixture (masala) cook till it leaves ghee on the sides of the pot. 煮至所有的內容物帶出油水分離。
  14. Then add the cooked dal along with water to the masala. 加入剛剛煮熟的扁豆(與剛剛煮滾的水一起)。
  15. Add 1 cup of water and mix it well. Let it simmer for 3 to 5 minutes. 加入一杯的水並充分攪拌均勻,蓋上鍋子後悶約3~5分鐘。
  16. Add coriander and turn off the stove. 最後加入香菜即可關火。

3. Churma 甜小麥粉


Ingredients 食材:

  • Cooked Bati/4 pcs/烤好的小麥球
  • Powdered Sugar/¼ cup (To required sweetness)/糖粉
  • Ghee/2 tbsp/酥油
  • Cashews (roughly chopped)/2 tbsp/腰果(略切碎)
  • Almonds (roughly chopped)/2 tbsp/杏仁(略切碎)
  • Cardamom seed powder/½ tsp/綠豆蔻籽粉


Method 方法:

  1. Break bati in few pieces and coarsely blend them in a blender. 將烤小麥球用手大略撥開,並放入攪拌機內打碎。
  2. Take ghee in a pot. 取一些酥油放入鍋內。
  3. Heat the ghee on a medium to low heat. 使用中小火加熱。
  4. Add the grinded bati to the ghee and mix it well. 將打碎的小麥粉加入鍋內並攪拌均勻。
  5. Cook it for 4 to 5 minutes while constantly stirring or until golden brown. 加熱拌炒4~5分鐘並適時充分攪拌直到小麥粉呈現金黃色。
  6. Turn off the heat and take the mixture in another bowl. 關火並將炒好的小麥粉放入調理碗中。
  7. Add cardamom powder, cashews, almonds to the mixture and stir well. 將綠豆蔻籽粉、切碎的腰果及杏仁加入調理碗中,並充分攪拌。
  8. Let it cool down a little and only then add the powdered sugar. 攪拌後等待小麥粉冷卻才能加入糖粉。
  9. Mix it well and serve. 充分攪拌均勻後即可上桌。


How to serve? 如何呈現及食用?

  1. Take a big bowl. 取一個大碗。
  2. Crush a bati in the bowl with your hands. 把烤小麥球用手撥碎並放入碗中。
  3. Pour 2 to 3 laddles of hot dal. 在碗中再倒入2~3湯匙的扁豆糊。
  4. Drizzle a tablespoon of ghee and serve. 滴入一些酥油即可上桌。
  5. Also serve churma along with some sliced onions and tomatoes salad. 甜小麥粉與一些切碎的洋蔥和蕃茄放置一旁一起食用。
